Ingredients
- 4 boneless skinless chicken breasts, pounded to ½ inch thick
- ⅓ cup olive oil
- 2 tablespoons ranch dressing
- 1 tablespoon Worcestershire sauce
- 1 teaspoon minced garlic
- 1 teaspoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grated Parmesan cheese
- ½ cup shredded provolone or mozzarella cheese
- 2 tablespoons ranch dressing
- 3 tablespoons melted butter
- ½ cup panko breadcrumbs
- 1 teaspoon garlic powder
- Chopped parsley or basil (for garnish)
- Mashed potatoes or roasted green beans (for serving)
Instructions
- Whisk together olive oil, ranch dressing, Worcestershire sauce, lemon juice, garlic, salt, and pepper.
- Pour marinade over chicken in a resealable bag. Marinate for 30 minutes or up to 8 hours.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
- Cook chicken 4 to 5 minutes per side until golden and cooked through to 165°F.
- Transfer chicken to a baking sheet.
- Preheat the oven to broil (450°F).
- In a small bowl, combine Parmesan, provolone, and ranch dressing. Microwave 15–20 seconds until just melted.
- Spread the cheese mixture evenly over each chicken breast.
- Stir melted butter, garlic powder, and panko together.
- Spoon the panko mixture over the cheese layer.
- Broil 2 to 4 minutes until the topping is golden and crisp.
- Garnish with parsley or basil and serve warm.
