Ingredients
- 1 pound ground beef, 85% lean
- 1 medium onion, diced
- 2 teaspoons ground cumin

- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can diced green chiles, 4 ounces
- 1 can diced tomatoes, 15 ounces
- 1 can tomato sauce, 8 ounces
- 1 can black beans, 15 ounces, drained and rinsed
- 1 can pinto beans, 15 ounces, drained and rinsed
- 1 can corn, 15 ounces, drained
- 2 cups low-sodium beef broth
- 1 tablespoon vegetable oil
- Shredded cheddar cheese (Optional Topping)

- Diced avocado (Optional Topping)
- Chopped fresh cilantro (Optional Topping)

Instructions
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add ground beef and diced onion. Cook, breaking up the meat, until beef is browned and onion is soft, about 5 minutes.
- Drain excess fat, leaving about 1 tablespoon.
- Add cumin, chili powder, smoked paprika, garlic powder, coriander, oregano, salt, and black pepper. Stir constantly for 30 seconds until fragrant.
- Stir in green chiles, diced tomatoes, tomato sauce, black beans, pinto beans, corn, and beef broth until combined.
- Bring the soup to a boil over high heat. Reduce heat to medium and simmer uncovered for 5 to 7 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary.
- Ladle soup into bowls and serve immediately with desired toppings.
