Description
This panko crusted salmon is flaky, crispy, and full of flavor. It is an easy baked salmon dinner ready in under 30 minutes.
Ingredients
- 1 1/2 pounds salmon fillet cut into 4 portions about 1 inch thick
- 2 tablespoons olive oil
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 1 cup panko breadcrumbs
- 1/3 cup finely grated parmesan style hard cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
Instructions
- Heat oven to 400°F and line a rimmed baking sheet with parchment paper.
- Place salmon portions on the baking sheet and brush lightly with olive oil. Season with salt and black pepper.
- In a bowl, combine panko breadcrumbs, grated cheese, garlic powder, and dried parsley.
- Press the panko mixture evenly onto the top of each salmon portion.
- Bake for 12 to 15 minutes until the salmon flakes easily and reaches an internal temperature of 145°F.
- Switch oven to broil and broil for 1 to 2 minutes until the topping is golden and crisp.
- Remove from the oven and rest for 2 minutes before serving.
Notes
- Broil briefly at the end for extra crispiness, watching closely to avoid burning.
