Description

This panko crusted salmon is flaky, crispy, and full of flavor. It is an easy baked salmon dinner ready in under 30 minutes.


Ingredients

  • 1 1/2 pounds salmon fillet cut into 4 portions about 1 inch thick
  • 2 tablespoons olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1/3 cup finely grated parmesan style hard cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley


Instructions

  1. Heat oven to 400°F and line a rimmed baking sheet with parchment paper.
  2. Place salmon portions on the baking sheet and brush lightly with olive oil. Season with salt and black pepper.
  3. In a bowl, combine panko breadcrumbs, grated cheese, garlic powder, and dried parsley.
  4. Press the panko mixture evenly onto the top of each salmon portion.
  5. Bake for 12 to 15 minutes until the salmon flakes easily and reaches an internal temperature of 145°F.
  6. Switch oven to broil and broil for 1 to 2 minutes until the topping is golden and crisp.
  7. Remove from the oven and rest for 2 minutes before serving.

  • Broil briefly at the end for extra crispiness, watching closely to avoid burning.
