Description

Oven baked Cajun shrimp foil packets packed with bold spices and fresh lemon. A quick, flavorful dinner ready in 25 minutes.


Ingredients

  • 2 pounds large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving


Instructions

  1. Preheat your oven to 375 degrees F. Line a large baking sheet with foil and lightly spray with oil.
  2. In a large bowl, combine shrimp, olive oil, Cajun seasoning, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, red pepper flakes, salt, and black pepper. Toss until evenly coated.
  3. Divide the shrimp evenly between two large sheets of foil placed on the prepared baking sheet. Drizzle each portion with fresh lemon juice.
  4. Fold the foil over the shrimp and seal tightly to create packets, leaving a little room inside for steam to circulate.
  5. Bake for 14 to 18 minutes until the shrimp are pink, opaque, and cooked through.
  6. Carefully open the packets to avoid steam burns. Sprinkle with chopped parsley and serve with lemon wedges.
  7. Cook shrimp until opaque and firm and to an internal temperature of 145 degrees F to ensure it is safe to eat.
