Description
Oven baked Cajun shrimp foil packets packed with bold spices and fresh lemon. A quick, flavorful dinner ready in 25 minutes.
Ingredients
- 2 pounds large shrimp peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon sweet paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving
Instructions
- Preheat your oven to 375 degrees F. Line a large baking sheet with foil and lightly spray with oil.
- In a large bowl, combine shrimp, olive oil, Cajun seasoning, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, red pepper flakes, salt, and black pepper. Toss until evenly coated.
- Divide the shrimp evenly between two large sheets of foil placed on the prepared baking sheet. Drizzle each portion with fresh lemon juice.
- Fold the foil over the shrimp and seal tightly to create packets, leaving a little room inside for steam to circulate.
- Bake for 14 to 18 minutes until the shrimp are pink, opaque, and cooked through.
- Carefully open the packets to avoid steam burns. Sprinkle with chopped parsley and serve with lemon wedges.
