Description
Soft, chocolatey Oreo whoopie pies filled with fluffy vanilla cream. This recipe creates bakery style treats at home.
Ingredients
- ½ cup unsalted butter softened (for cookies)
- 1 cup granulated sugar
- 1 large egg room temperature
- 1 teaspoon vanilla extract (for cookies)
- 1½ cups all purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- ½ cup whole milk
- ½ cup unsalted butter softened (for filling)
- 1½ cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 2 to 3 tablespoons heavy cream
Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Beat the butter and granulated sugar in a large bowl until light and fluffy, about 2 minutes.
- Beat in the egg and vanilla extract until fully combined.
- Whisk together the flour, cocoa powder, baking soda, and salt in a separate bowl.
- Add the dry ingredients to the wet ingredients alternately with the milk, mixing just until smooth.
- Scoop the batter into rounded tablespoon portions and place them 2 inches apart on the prepared baking sheets.
- Bake for 8 to 10 minutes until the tops are set and spring back lightly when touched.
- Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Beat the butter for the filling until smooth.
- Add the powdered sugar and vanilla extract and beat until combined.
- Add the heavy cream a little at a time until the filling is light and spreadable.
- Spread or pipe the filling onto the flat side of half the cookies and top with the remaining cookies to form sandwiches.
Notes
- Let the cookies cool completely before filling so the cream stays fluffy and set.
