Ingredients

  • 2 cups all purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • ½ cup raisins
  • 1 teaspoon orange zest
  • 1 cup buttermilk, plus 1 tablespoon for brushing


Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs with visible butter pieces.
  4. Stir in the raisins until evenly distributed.
  5. Pour in the buttermilk and mix just until a shaggy dough forms.
  6. Turn the dough onto a lightly floured surface and gently knead 5 to 6 times until it holds together.
  7. Divide the dough into 8 equal portions and shape into rustic rounds.
  8. Place the scones 2 inches apart on the prepared baking sheet.
  9. Brush the tops with the remaining tablespoon of buttermilk.
