Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Season chicken breasts with salt, pepper, and Italian herbs; sear until golden brown on both sides (about 3–4 minutes per side), but not fully cooked. Remove and set aside.
  3. In the same pot, add minced garlic and sun‑dried tomatoes; sauté until fragrant (1–2 minutes).
  4. Add orzo pasta and chicken broth; stir, scrape up browned bits, bring to a simmer.
  5. Cover and cook per orzo package directions (about 8–10 minutes) until al dente.
  6. Stir in heavy cream and grated Parmesan until sauce is silky and thickened.
  7. Add spinach; stir until wilted.
  8. Nestle the seared chicken back in and cook another 3–5 minutes until chicken is fully cooked and flavors meld.
  9. Taste and adjust seasoning with salt and pepper. Serve hot.
