Description
This one-pot lasagna soup delivers rich, cheesy, Italian comfort flavors quickly. It uses ground meat, tender noodles, and a creamy finish, making it ideal for fast weeknight meals.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 1 pound ground beef or ground turkey
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 2 tablespoons tomato paste
- 25 ounces tomato basil pasta sauce
- 1 can (28 ounces) diced tomatoes
- 4 cups chicken broth
- 12 lasagna noodles, broken into 2-inch pieces
- 1 teaspoon sea salt, or to taste
- 1/2 cup heavy cream or whole milk
- For topping: 1/2 cup ricotta cheese
- For topping: 1/2 cup shredded mozzarella cheese
- For topping: 1/4 cup grated parmesan
- For topping: 2 tablespoons chopped fresh basil
Instructions
- Heat olive oil in a large pot over medium heat. Cook onion until softened, about 3 minutes.
- Add ground beef and cook until browned, about 6 minutes. Drain excess fat.
- Stir in garlic, red pepper flakes, oregano, and tomato paste. Cook for 1 minute until fragrant.
- Add tomato sauce, diced tomatoes, and chicken broth. Bring mixture to a boil.
- Add broken lasagna noodles and salt. Reduce heat and simmer 10 to 12 minutes, stirring occasionally, until noodles are tender.
- Stir in heavy cream and adjust seasoning to taste.
- Ladle soup into bowls and top with ricotta, mozzarella, parmesan, and fresh basil. Serve warm.
