Description

One pot creamy beef and shells with tender pasta, savory beef, and a rich cheesy tomato sauce. An easy 30 minute family dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef 85 to 90 percent lean
  • 1 small yellow onion finely diced
  • 3 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon black pepper divided
  • 3 cups low sodium beef broth
  • 1 15 ounce can tomato sauce
  • 8 ounces small pasta shells about 2 cups dry
  • 1/2 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large deep skillet or Dutch oven over medium high heat. Add ground beef and cook for 5 to 7 minutes, breaking it apart, until browned and cooked through to 160 degrees F.
  2. Add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic, Italian seasoning, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 30 seconds until fragrant.
  3. Pour in beef broth and tomato sauce. Stir well and bring to a gentle boil.
  4. Stir in the dry pasta shells, ensuring they are mostly submerged in liquid.
  5. Reduce heat to medium low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
  6. Remove from heat and stir in heavy cream along with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  7. Add shredded cheddar cheese and stir until fully melted and creamy.
  8. Let the dish rest for 5 minutes to thicken slightly. Sprinkle with chopped parsley before serving.
