Rich, creamy pasta with chicken cooked in a single pan for simple cleanup.
Ingredients
- 1.5 pounds boneless skinless chicken breasts cut into bite size pieces
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons unsalted butter
- 3 cloves garlic minced
- 4 cups low sodium chicken broth
- 12 ounces penne pasta
- 1.5 cups heavy cream warmed
- 1 cup freshly grated parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Season the chicken pieces with salt and pepper.
- Melt butter in a large deep skillet over medium high heat. Add chicken in a single layer and cook for 4 to 5 minutes until lightly golden on the outside but not fully cooked through. Remove and set aside.
- Reduce heat to medium and add garlic to the same pan. Cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Bring to a gentle simmer.
- Add the pasta and stir well. Cook uncovered for 8 minutes stirring occasionally until the pasta begins to soften.
- Stir in the warm cream and return the chicken along with any juices. Cover and cook for another 5 to 7 minutes stirring occasionally until the pasta is tender and the sauce has thickened.
- Stir in parmesan cheese until melted and creamy. Taste and adjust seasoning if needed.
- Remove from heat and sprinkle with fresh parsley before serving.
- Ensure the chicken reaches an internal temperature of 165 degrees F before serving.
Notes
- For extra vegetables stir in cooked broccoli mushrooms or sun dried tomatoes at the end.
- Serve immediately for the creamiest texture.
