Description
A quick and healthy one-pan meal featuring lean ground turkey, zucchini, and simple spices, ready in 30 minutes.
Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground turkey (93 percent lean)
- 1 teaspoon kosher salt, divided
- 1/2 teaspoon black pepper, divided
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 3 garlic cloves, minced
- 1/2 cup diced yellow onion
- 2 medium zucchini (about 12 ounces total), cut into 1/2 inch half moons
- 1 cup cherry tomatoes, halved
- 1/4 cup low sodium chicken broth
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium heat. Add olive oil and swirl to coat the pan.
- Add ground turkey to the skillet. Sprinkle with 1/2 teaspoon salt, 1/4 teaspoon black pepper, paprika, oregano, and crushed red pepper flakes. Cook for 5 to 7 minutes, breaking it apart with a spoon, until mostly browned.
- Stir in minced garlic and diced onion. Cook for 2 to 3 minutes until the onion softens and the turkey is fully cooked.
- Add zucchini, cherry tomatoes, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper. Stir well.
- Pour in chicken broth and cook for 6 to 8 minutes, stirring occasionally, until the zucchini is tender but not mushy and most of the liquid has reduced.
- Remove from heat and sprinkle with chopped parsley before serving.
Notes
- Cook ground turkey to an internal temperature of 165 degrees F as measured with a meat thermometer to ensure it is safe to eat.
