Description
This old-fashioned goulash combines beef, pasta, and vegetables in a rich tomato sauce for an easy, comforting one-pot meal perfect for weeknights. It is a nostalgic, hearty dish ready in about 40 minutes.
Ingredients
- 1 pound lean ground beef
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup diced bell peppers (red or green)
- 1 can (15 ounces) diced tomatoes
- 8 ounces tomato sauce
- 2 cups beef broth
- 2 cups elbow macaroni, uncooked
- 2 teaspoons Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Grated Parmesan cheese (optional garnish)
- Chopped fresh parsley (optional garnish)
Instructions
- Cook ground beef in a large pot or Dutch oven over medium heat until fully browned. Drain excess fat.
- Stir in chopped onion and minced garlic. Cook for 3–4 minutes until onions are soft and fragrant.
- Add diced bell peppers and cook another 3–4 minutes until slightly tender.
- Pour in diced tomatoes, tomato sauce, and beef broth. Stir to combine and bring to a gentle simmer for 5 minutes.
- Stir in elbow macaroni, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 15–20 minutes, stirring occasionally, until the pasta is al dente.
- Taste and adjust seasoning if needed. Serve hot, topped with grated Parmesan and parsley if desired.
