Description

This hearty and comforting one-pan family meal cooks entirely on the stovetop, requiring no oven use. It features tender chicken and fluffy rice with vegetables for a fast, simple dinner.


Ingredients

  • 1.5 pounds boneless skinless chicken thighs cut into 1 inch pieces
  • 2 tablespoons olive oil
  • 1 cup long grain white rice rinsed
  • 2.25 cups water
  • 1 cup frozen peas and carrots
  • 0.5 cup diced yellow onion
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.75 teaspoon paprika
  • 0.5 teaspoon garlic powder


Instructions

  1. Heat olive oil in a large deep skillet with a lid over medium heat.
  2. Add chicken and cook 5 to 6 minutes, stirring occasionally, until lightly browned.
  3. Stir in onion, salt, black pepper, paprika, and garlic powder.
  4. Cook 2 minutes until onion softens.
  5. Add rice and stir to coat with oil.
  6. Pour in water and bring to a gentle boil.
  7. Reduce heat to low, cover, and simmer 15 minutes.
  8. Sprinkle peas and carrots over the rice.
  9. Cover and cook 5 minutes more until rice is tender and liquid is absorbed.
  10. Remove from heat and rest 5 minutes before fluffing and serving.
