Ingredients
- 1.5 pounds boneless skinless chicken thighs cut into 1 inch pieces
- 2 tablespoons olive oil
- 1 cup long grain white rice rinsed
- 2.25 cups water
- 1 cup frozen peas and carrots
- 0.5 cup diced yellow onion
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.75 teaspoon paprika
- 0.5 teaspoon garlic powder
Instructions
- Heat olive oil in a large deep skillet with a lid over medium heat.
- Add chicken and cook 5 to 6 minutes, stirring occasionally, until lightly browned.
- Stir in onion, salt, black pepper, paprika, and garlic powder.
- Cook 2 minutes until onion softens.
- Add rice and stir to coat with oil.
- Pour in water and bring to a gentle boil.
- Reduce heat to low, cover, and simmer 15 minutes.
- Sprinkle peas and carrots over the rice.
- Cover and cook 5 minutes more until rice is tender and liquid is absorbed.
- Remove from heat and rest 5 minutes before fluffing and serving.
