Description

A creamy, smooth no-bake strawberry cheesecake with a graham cracker crust. It sets in the refrigerator, making it an easy dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 1/2 cups fresh strawberries, chopped
  • 2 tablespoons granulated sugar


Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of a 9-inch pan to form the crust. Refrigerate for 20 minutes to set.
  2. Beat cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Whip heavy cream until stiff peaks form.
  4. Fold whipped cream into the cream cheese mixture until light and fluffy.
  5. Spread half of the filling over the chilled crust.
  6. Combine chopped strawberries and sugar in a small bowl, then spoon over the filling.
  7. Add remaining cheesecake filling on top and smooth evenly.
  8. Refrigerate for at least 4 hours or until fully set.
  9. Slice and serve chilled.

Notes

  • For clean slices, chill overnight and wipe the knife between cuts.
