Ingredients
- 1 1/4 cups old-fashioned rolled oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1/2 cup mini chocolate chips
- 1/2 cup ground flaxseed
- 1 teaspoon vanilla extract
- Pinch of salt (optional)
Instructions
- Stir oats, ground flaxseed, and optional salt in a mixing bowl until mixed.
- Add peanut butter, honey, vanilla, and chocolate chips. Mix using a spatula until the mixture is even and sticky.
- Chill the bowl for 20 to 30 minutes to aid shaping.
- Scoop and roll the mixture into 1-inch balls. Lightly wet your hands if the mixture sticks.
- Refrigerate the balls in an airtight container for up to 1 week, or freeze for longer keeping.
