These no-bake mint chocolate chip protein balls offer a quick, healthy snack providing 5g of protein each. They suit meal prep or post-workout energy needs.
Ingredients
- ½ cup rolled oats
- 1 cup almond butter, room temperature
- 2 tablespoons honey
- ¼ cup vanilla protein powder
- ¼ teaspoon peppermint extract (adjust to taste)
- ¼ cup mini dark chocolate chips
- 1–2 tablespoons unsweetened almond milk (as needed for texture)
Instructions
- Combine oats, almond butter, honey, protein powder, and peppermint extract in a large bowl. Mix until dough forms.
- If the mixture is dry, add almond milk 1 tablespoon at a time until it holds together easily.
- Fold in the mini chocolate chips until mixed.
- Scoop about 1 tablespoon of mixture and roll into balls.
- Place balls on a parchment-lined sheet. Chill for 20 minutes to firm.
- Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 1 month.
