These no-bake mint chocolate chip protein balls offer a quick, healthy snack providing 5g of protein each. They suit meal prep or post-workout energy needs.


Ingredients

  • ½ cup rolled oats
  • 1 cup almond butter, room temperature
  • 2 tablespoons honey
  • ¼ cup vanilla protein powder
  • ¼ teaspoon peppermint extract (adjust to taste)
  • ¼ cup mini dark chocolate chips
  • 12 tablespoons unsweetened almond milk (as needed for texture)


Instructions

  1. Combine oats, almond butter, honey, protein powder, and peppermint extract in a large bowl. Mix until dough forms.
  2. If the mixture is dry, add almond milk 1 tablespoon at a time until it holds together easily.
  3. Fold in the mini chocolate chips until mixed.
  4. Scoop about 1 tablespoon of mixture and roll into balls.
