Description

Easy no-bake energy bites made with oats and peanut butter. A healthy snack ready in minutes perfect for meal prep and busy days.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • 1 third cup honey
  • 1 half cup mini chocolate chips
  • 1 third cup ground flaxseed
  • 1 teaspoon vanilla powder
  • 1 quarter teaspoon fine sea salt


Instructions

  1. Add the oats, ground flaxseed, chocolate chips, vanilla powder, and salt to a large bowl.
  2. Stir until the dry ingredients are evenly combined.
  3. Add the peanut butter and honey to the bowl.
  4. Mix with a sturdy spoon until a thick dough forms.
  5. Scoop about 1 tablespoon of mixture and roll into a 1 inch ball.
  6. Place the balls on a parchment-lined tray.
  7. Refrigerate for 30 minutes until firm.
  8. Transfer to an airtight container and keep chilled.
