Description

Ingredients
- 2 boneless skinless chicken breasts about 7 ounces each
- 1.5 teaspoons kosher salt divided
- 0.75 teaspoon black pepper divided
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 8 ounces cremini mushrooms finely sliced
- 2 cloves garlic minced
- 0.5 teaspoon dried thyme
- 2 cups fresh baby spinach
- 3 ounces low moisture mozzarella cheese sliced
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Pat the chicken breasts dry with paper towels.
- Using a sharp knife, carefully cut a deep pocket into the side of each chicken breast without slicing all the way through. Season both the inside and outside with half of the salt and pepper.
- Heat olive oil and butter in an oven safe skillet over medium high heat. Add the sliced mushrooms in a single layer and cook for 5 to 6 minutes, stirring occasionally, until the mushrooms release their moisture and turn golden brown.
- Stir in the garlic, dried thyme, and remaining salt and pepper. Cook for 30 seconds until fragrant. Add the spinach and cook for 1 minute until wilted. Remove the skillet from heat and let the mixture cool slightly.
- Divide the mushroom mixture evenly between the chicken breasts, stuffing it firmly into each pocket. Top the filling with sliced mozzarella. Secure the openings with toothpicks if needed.
- Return the skillet to medium high heat and sear the stuffed chicken for 2 minutes per side until lightly golden.
- Transfer the skillet to the oven and bake for 18 to 22 minutes until the thickest part of the chicken reaches an internal temperature of 165 degrees Fahrenheit. Cook poultry to an internal temperature of 165 degrees Fahrenheit as measured with a food thermometer.
- Remove from the oven and let the chicken rest for 5 minutes before removing toothpicks and serving.
