Description

Soft mozzarella stuffed bread rolls with a golden crust and stretchy centers. This easy bake delivers bakery style results at home.


Ingredients

  • 3 cups all purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon fine salt
  • 2.25 teaspoons active dry yeast
  • 1 cup warm water about 110°F
  • 2 tablespoons olive oil (for dough)
  • 8 ounces low moisture mozzarella cheese cut into 8 equal cubes
  • 1 tablespoon olive oil (for brushing)


Instructions

  1. Combine warm water, sugar, and yeast in a large bowl. Let stand 5 minutes until foamy.
  2. Add flour, salt, and 2 tablespoons of olive oil. Mix until a soft dough forms.
  3. Knead on a lightly floured surface for 8 to 10 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 60 minutes until doubled.
  5. Preheat oven to 375°F and line a baking sheet with parchment paper.
  6. Punch down dough and divide it into 8 equal pieces. Flatten each piece into a circle.
  7. Place one cube of mozzarella in the center of each circle and pinch edges tightly to seal.
  8. Arrange rolls seam side down on the baking sheet. Brush tops lightly with 1 tablespoon of olive oil.
  9. Bake for 18 to 20 minutes until puffed and golden brown.
  10. Cool for 5 minutes before serving warm so the cheese sets slightly.
