Description
This strawberry bread is soft, moist, and packed with fresh strawberries, finished with a sweet strawberry glaze. It is an easy strawberry bread recipe.
Ingredients
- Strawberry Bread: ¾ cup granulated sugar
- ½ cup whole milk
- ½ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon kosher salt
- 2 cups fresh strawberries finely diced
- 2 tablespoons all purpose flour
- Strawberry Glaze: 2 cups powdered sugar
- 2 tablespoons unsalted butter melted
- ⅓ cup fresh strawberries finely diced
- ½ teaspoon vanilla extract
- 1 to 2 tablespoons milk
Instructions
- Preheat the oven to 350°F and grease a 9 by 5 inch loaf pan.
- In a large bowl, whisk together the sugar, milk, oil, egg, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and stir just until combined.
- Toss the diced strawberries with 2 tablespoons flour, then gently fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 55 minutes until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a rack to cool completely.
- To make the glaze, mix the powdered sugar, melted butter, diced strawberries, vanilla extract, and milk until smooth.
- Spread the glaze over the cooled bread, slice, and serve.
Notes
- Let the bread cool completely before glazing to prevent the topping from melting.
