  • 2 medium zucchinis, grated (about 2 cups)
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan.
  2. Grate the zucchinis and squeeze out excess moisture.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and vegetable oil. Add eggs and vanilla extract, whisking until smooth.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Gently fold dry ingredients into wet ingredients until just combined. Stir in zucchini and nuts if using.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Cool on a wire rack before slicing.
