- 1 pint fresh blueberries
- 1 cup icing sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon heavy cream
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease 2 large or 4 mini loaf pans.
- In a large bowl, beat eggs, oil, vanilla, and sugar until combined.
- Fold in shredded zucchini. Beat in flour, salt, baking powder, and baking soda until just combined. Do not overmix.
- Gently fold in blueberries. Pour batter into prepared pans.
- Bake for about 50 minutes, or until a toothpick comes out clean. Cool in pans for 20 minutes, then on wire racks until completely cool.
- Whisk powdered sugar, lemon juice, and cream until smooth for the glaze. Drizzle over cooled bread. Let glaze set before serving.
