Ingredients
- Blueberry Bread: ¾ cup granulated sugar
- ½ cup whole milk
- ½ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon kosher salt
- 2 cups fresh blueberries
- Crumb Topping: ⅓ cup granulated sugar
- ⅓ cup all purpose flour
- 3 tablespoons unsalted butter softened
Instructions
- Preheat the oven to 350°F and grease an 8½ by 4½ inch loaf pan. Line with parchment paper if you want.
- Whisk the sugar, milk, oil, egg, and vanilla extract together in a medium bowl until smooth.
- Whisk the flour, baking powder, and salt in a separate bowl.
- Add the dry ingredients to the wet ingredients and stir just until they combine. Do not overmix.
- Gently fold in the blueberries until they distribute evenly.
- Pour the batter into the prepared loaf pan and smooth the top.
- Mix the sugar, flour, and softened butter in a small bowl until crumbly.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 55 to 65 minutes until the top is golden and a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 10 minutes, then move it to a wire rack to cool completely before slicing.
Notes
- If the top browns too fast, loosely cover with foil during the last 10 minutes of baking.
