Description

Juicy, herb-packed beef meatballs served with a creamy yogurt dipping sauce for an easy Mediterranean-inspired appetizer or family dinner.


Ingredients

  • 1 pound lean ground beef
  • 1/3 cup plain breadcrumbs
  • 1 large egg
  • 1/4 cup finely diced red onion
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • For the yogurt sauce:
  • 3/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 small garlic clove minced
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, red onion, garlic, parsley, dill, oregano, salt, and black pepper. Mix gently until combined.
  3. Roll the mixture into small meatballs about 1 inch wide and place them on the prepared baking sheet.
  4. Brush or lightly drizzle the meatballs with olive oil.
  5. Bake for 12 to 15 minutes until browned and cooked through to an internal temperature of 160°F.
  6. While the meatballs bake, stir together the Greek yogurt, lemon juice, dill, garlic, and salt in a small bowl.
  7. Serve the warm meatball bites with the yogurt dipping sauce.

  • For even cooking, make the meatballs the same size and avoid overmixing the meat mixture.
