Ingredients
- 1 pound fresh cauliflower florets
- 3 tablespoons almond flour (optional)
- 3 tablespoons butter
- 1 cup heavy cream
- 1 teaspoon salt
- 6 oz sharp cheddar cheese, shredded
- 3 oz gruyere cheese, shredded
Instructions
- Place a steamer basket in a large stockpot with 1 inch of water. Bring to a boil. Add cauliflower florets, cover, and steam for 3-5 minutes until fork tender. Remove from heat and set aside.
- In a medium saucepan, melt butter over medium heat. Stir in almond flour (if using) for 30 seconds.
- Slowly add heavy cream while stirring constantly. Add salt. Bring to a boil and simmer for 5-7 minutes until thickened.
- Gradually add shredded cheeses, a handful at a time, stirring until smooth. Remove from heat.
- Add steamed cauliflower to the cheese sauce and stir to coat. Serve immediately.
Notes
- For a baked version, pour into a baking dish, top with crushed beef crisps, and bake at 375F for 10-12 minutes.
