Ingredients
- 1 (15.25 ounce) package yellow cake mix
- 8 ounces cream cheese
- 1 ½ cups confectioners’ sugar
- 1 (20 ounce) can crushed pineapple with juice
- 2 (8 ounce) cans mandarin oranges, drained
- 1 (3.5 ounce) package instant vanilla pudding mix
- 1 (8 ounce) container frozen whipped topping, thawed
Instructions
- Mix and bake cake mix according to package directions to create two 8-inch round layers.
- Allow the cake layers to cool completely. Split each 8-inch layer in half horizontally to result in four cake layers total.
- Beat the cream cheese in a large bowl until it is soft. Gradually mix in the confectioners’ sugar until combined.
- Stir in the crushed pineapple with its juice and the drained mandarin oranges. Set aside about 5 mandarin orange slices for later decoration.
- Mix the dry instant vanilla pudding mix into the cream cheese mixture.
- Gently fold in the thawed whipped topping until fully incorporated. This is your filling and frosting.
- Place the first cake layer on a serving plate, cut-side facing up. Spread a layer of the cream mixture over it.
- Place the second cake layer on top, cut-side facing down. Top this layer with more of the cream mixture.
- Continue layering the cake and cream until all four layers are used, finishing with a layer of cream on the top and sides.
- Decorate the top of the cake with the reserved mandarin orange slices.
- Refrigerate the cake overnight before you serve it for the best texture and flavor.
