Description
This Mexican chicken casserole is cheesy, flavorful, and packed with protein. It is a single-pan dinner perfect for meal preparation and busy weeknights.
Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion diced
- 2 cloves garlic minced
- 2 bell peppers diced
- 1 small jalapeño minced
- 1 pound ground chicken
- 1 packet taco seasoning
- 24 ounces riced cauliflower
- ¼ cup salsa verde
- 2 cups shredded Mexican blend cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Heat oven to 350°F and lightly grease a 9 x 13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add onion, garlic, bell peppers, and jalapeño and cook for 3 to 4 minutes until softened.
- Add ground chicken and taco seasoning and cook for 6 to 8 minutes, breaking it up, until the chicken is fully cooked and no longer pink.
- Stir in riced cauliflower and salsa verde. Cover and cook for 6 to 8 minutes until the cauliflower is tender.
- Season with salt and black pepper, then stir in 1 cup of shredded cheese.
- Transfer mixture to the prepared baking dish and spread evenly.
- Sprinkle remaining cheese evenly over the top.
- Bake uncovered for 15 to 20 minutes until the cheese is melted and bubbly.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- Letting the casserole rest briefly helps it set and makes serving easier.
