Ingredients
- 1 lb 80/20 ground beef
- 1 cup sharp cheddar cheese or pepper jack, grated
- 4 large flour tortillas
- ½ cup sour cream
- 1 cup lettuce, shredded
- 1 medium tomato, sliced
- Salt and pepper to taste
Instructions
- Preheat your skillet over medium-high heat until sizzling.
- Grate or slice cheese thinly while the skillet heats up.
- Form four loose balls of ground beef (about 4 oz each) without packing tightly.
- Place beef balls on the hot skillet and smash them down with a spatula; cook until browned on one side (about 3–4 minutes).
- Flip patties, add cheese on top, and cover briefly to melt the cheese.
- Remove patties and place one tortilla in the skillet; layer with lettuce, patties, and top with another tortilla.
- Cook until golden brown and crispy on both sides.
