Ingredients

  • 1 lb 80/20 ground beef
  • 1 cup sharp cheddar cheese or pepper jack, grated
  • 4 large flour tortillas
  • ½ cup sour cream
  • 1 cup lettuce, shredded
  • 1 medium tomato, sliced
  • Salt and pepper to taste


Instructions

  1. Preheat your skillet over medium-high heat until sizzling.
  2. Grate or slice cheese thinly while the skillet heats up.
  3. Form four loose balls of ground beef (about 4 oz each) without packing tightly.
  4. Place beef balls on the hot skillet and smash them down with a spatula; cook until browned on one side (about 3–4 minutes).
  5. Flip patties, add cheese on top, and cover briefly to melt the cheese.
  6. Remove patties and place one tortilla in the skillet; layer with lettuce, patties, and top with another tortilla.
