Description

Ingredients

  • 2 cups prepared mashed potatoes fully cooled
  • 1 large egg
  • 0.75 cup shredded cheddar cheese
  • 0.25 cup all-purpose flour
  • 1 tablespoon chopped green onions
  • 0.75 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons olive oil


Instructions

  1. Place mashed potatoes in a large bowl and break up any lumps.
  2. Stir in egg, cheddar cheese, flour, green onions, salt, and black pepper until combined.
  3. Shape the mixture into 8 evenly sized patties.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add patties in a single layer without overcrowding.
  6. Cook for 3 to 4 minutes until the bottoms are golden and crisp.
  7. Flip gently and cook 3 to 4 minutes more until heated through and browned.
  8. Transfer to a plate and serve warm.
