Description

This creamy garlic butter mashed cauliflower offers a light, low-carb substitute for mashed potatoes. It is simple to make and full of flavor.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons milk or cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley for garnish


Instructions

  1. Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 10 to 12 minutes, until fork-tender.
  2. Drain the cauliflower well and pat dry with a clean towel to remove excess moisture.
  3. In a small skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant but not browned. Remove from heat.
  4. Transfer cooked cauliflower to a food processor or blender. Add the garlic butter, Parmesan cheese, milk, salt, and pepper.
  5. Blend until smooth and creamy, scraping down the sides as needed. Add a little extra milk if you want a thinner consistency.
  6. Transfer to a serving bowl and top with a small pat of butter and fresh parsley. Serve warm.
