Ingredients
- For the Salmon:
- 4 medium salmon fillets, skinless
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp paprika
- Kosher salt and black pepper to taste
- For the Garlic Butter Sauce:
- 3 tbsp unsalted butter
- 2-3 cloves garlic, minced
- 3 tbsp all-purpose flour
- 1 ½ cups chicken broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 1 tsp lemon zest (optional)
- Fresh basil, for garnish
Instructions
- Pat the salmon fillets dry with a paper towel. Brush them with olive oil and season both sides with Italian seasoning, paprika, salt, and pepper.
- Heat a large skillet over medium-high heat. Add the salmon fillets and sear for about 3-4 minutes per side, until golden brown and cooked through. Remove the salmon from the skillet and set it aside on a plate.
- In the same skillet, reduce the heat to medium. Add the butter and let it melt. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Whisk in the flour to create a smooth paste (a roux) and cook for one minute.
- Slowly whisk in the chicken broth, followed by the heavy cream, until the sauce is smooth. Bring to a simmer.
- Stir in the grated Parmesan cheese, chopped sun-dried tomatoes, and lemon zest (if using). Continue to simmer for a few minutes, stirring occasionally, until the sauce has thickened.
- Return the cooked salmon fillets to the skillet, nestling them into the sauce. Spoon some of the sauce over the top of the salmon.
- Let the salmon simmer in the sauce for another 1-2 minutes to heat through.
- Garnish with fresh basil and serve immediately over pasta, rice, or with crusty bread to soak up the creamy sauce.
