Ingredients

  • For the Salmon:
  • 4 medium salmon fillets, skinless
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Kosher salt and black pepper to taste
  • For the Garlic Butter Sauce:
  • 3 tbsp unsalted butter
  • 2-3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • 1 tsp lemon zest (optional)
  • Fresh basil, for garnish


Instructions

  1. Pat the salmon fillets dry with a paper towel. Brush them with olive oil and season both sides with Italian seasoning, paprika, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Add the salmon fillets and sear for about 3-4 minutes per side, until golden brown and cooked through. Remove the salmon from the skillet and set it aside on a plate.
  3. In the same skillet, reduce the heat to medium. Add the butter and let it melt. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Whisk in the flour to create a smooth paste (a roux) and cook for one minute.
  5. Slowly whisk in the chicken broth, followed by the heavy cream, until the sauce is smooth. Bring to a simmer.
  6. Stir in the grated Parmesan cheese, chopped sun-dried tomatoes, and lemon zest (if using). Continue to simmer for a few minutes, stirring occasionally, until the sauce has thickened.
  7. Return the cooked salmon fillets to the skillet, nestling them into the sauce. Spoon some of the sauce over the top of the salmon.
  8. Let the salmon simmer in the sauce for another 1-2 minutes to heat through.
  9. Garnish with fresh basil and serve immediately over pasta, rice, or with crusty bread to soak up the creamy sauce.
