Description

Creamy maple pecan overnight oats with warming cinnamon are perfect for busy mornings. Just 5 minutes of prep the night before for a nutritious breakfast.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk
  • ½ cup plain Greek yogurt
  • 2 tablespoons pure maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of sea salt
  • ¼ cup chopped pecans (for mix-ins)
  • 2 tablespoons chopped pecans (for topping)
  • 1 tablespoon pure maple syrup (for topping)
  • Fresh apple slices (for topping)

Instructions

  1. Combine oats, chia seeds, cinnamon, and salt in a large mixing bowl or mason jar.
  2. Add milk, Greek yogurt, maple syrup, and vanilla extract to the dry ingredients.
  3. Whisk everything together until well combined and no yogurt clumps remain.
  4. Fold in the ¼ cup chopped pecans, ensuring they are evenly distributed throughout the mixture.
  5. Cover the bowl or seal the jar tightly with a lid.
  6. Refrigerate for at least 8 hours or overnight to allow the oats to soften and absorb the liquid.
  7. Remove from the refrigerator in the morning and stir well, adding a splash of milk if you prefer a thinner consistency.
  8. Divide into serving bowls and top with the remaining chopped pecans, a drizzle of maple syrup, and fresh apple slices.

Notes

  • Replace Greek yogurt with coconut yogurt or almond yogurt for a dairy-free version.
  • Swap pecans for walnuts, almonds, or pumpkin seeds.
  • Use almond milk, oat milk, or coconut milk instead of dairy milk.
  • Add 1 tablespoon almond butter or peanut butter for extra creaminess and protein.
  • Stir in grated apple or dried cranberries for more fall flavor.
  • Use honey or agave nectar in place of maple syrup.
  • Make multiple jars at once for grab-and-go breakfasts throughout the week.
  • Toast the pecans in a dry skillet for 3 to 4 minutes before adding to enhance their nutty flavor.
  • Eat cold straight from the fridge or warm in the microwave for 30 to 45 seconds.
