Description

Sweet potatoes are baked with a sweet and savory maple bourbon glaze, topped with toasted pecans for a delightful side dish.


Ingredients

  • 3 lbs sweet potatoes, peeled and cut into 1/2-inch thick rounds
  • 1/2 cup maple syrup
  • 1/4 cup light brown sugar, packed
  • 4 tbsp unsalted butter, melted
  • 1/4 cup apple juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup chopped pecans


Instructions

  1. Preheat oven to 400ºF (200°C). Lightly grease a 13-by-9-inch casserole dish.
  2. Whisk together melted butter, maple syrup, brown sugar, apple juice, vanilla, cinnamon, nutmeg, and salt in a large bowl to make the glaze.
  3. Add sweet potato slices to the glaze and toss to coat evenly.
  4. Spread sweet potatoes in a single layer in the prepared dish. Pour any extra glaze over them.
  5. Bake for 45 to 60 minutes, stirring every 15 minutes, until potatoes are tender and sauce thickens into a glaze.
  6. Sprinkle chopped pecans on top during the last 10 minutes of baking to toast them.
  7. Remove from oven and cool for 10 minutes before serving.

Notes

  • For a richer flavor, you can add 1 tablespoon of bourbon to the glaze.
  • Ensure sweet potatoes are cut into uniform thickness for even cooking.
  • Pecans can be substituted with walnuts or almonds.
