Description
Sweet potatoes are baked with a sweet and savory maple bourbon glaze, topped with toasted pecans for a delightful side dish.
Ingredients
- 3 lbs sweet potatoes, peeled and cut into 1/2-inch thick rounds
- 1/2 cup maple syrup
- 1/4 cup light brown sugar, packed
- 4 tbsp unsalted butter, melted
- 1/4 cup apple juice
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 400ºF (200°C). Lightly grease a 13-by-9-inch casserole dish.
- Whisk together melted butter, maple syrup, brown sugar, apple juice, vanilla, cinnamon, nutmeg, and salt in a large bowl to make the glaze.
- Add sweet potato slices to the glaze and toss to coat evenly.
- Spread sweet potatoes in a single layer in the prepared dish. Pour any extra glaze over them.
- Bake for 45 to 60 minutes, stirring every 15 minutes, until potatoes are tender and sauce thickens into a glaze.
- Sprinkle chopped pecans on top during the last 10 minutes of baking to toast them.
- Remove from oven and cool for 10 minutes before serving.
Notes
- For a richer flavor, you can add 1 tablespoon of bourbon to the glaze.
- Ensure sweet potatoes are cut into uniform thickness for even cooking.
- Pecans can be substituted with walnuts or almonds.
