Description
Crispy baked quesadilla with creamy mac and cheese inside. A fun comfort food mashup.
Ingredients
- 2 cups elbow macaroni
- 2 tablespoons butter
- 2 tablespoons all purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Cook macaroni according to package directions, drain, and set aside.
- In a saucepan over medium heat, melt butter and whisk in flour. Cook for 1 minute until lightly golden.
- Gradually whisk in milk and cook for 3 to 5 minutes until sauce thickens.
- Stir in cheddar cheese, salt, and black pepper until smooth and creamy.
- Add cooked macaroni to cheese sauce and stir until fully coated.
- Lay out tortillas and spread a layer of mac and cheese on one half of each tortilla.
- Sprinkle mozzarella cheese over mac and cheese, then fold tortillas in half.
- Lightly brush both sides of each quesadilla with olive oil and place on the prepared baking sheet.
- Bake for 12 to 15 minutes, flipping halfway through, until tortillas are golden brown and crispy.
Notes
- For extra crispiness, place quesadillas on a wire rack over the baking sheet.
- Serve immediately for the best texture.
