Creamy low carb chicken casserole with broccoli and cheddar. This easy recipe is family-friendly and perfect for busy weeknights or meal prep.
Ingredients
- 2 pounds boneless skinless chicken breasts cut into 1 inch cubes
- 1 teaspoon kosher salt
- 1 half teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 cups small broccoli florets
- 1 tablespoon olive oil
- 1 half cup finely diced yellow onion
- 2 cloves garlic minced
- 4 ounces cream cheese softened
- 1 cup sour cream
- 1 half cup mayonnaise
- 1 and one half cups shredded sharp cheddar cheese divided
- 1 quarter cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Lightly grease a 9 by 13 inch baking dish.
- In a large bowl, toss the cubed chicken with salt, black pepper, garlic powder, and onion powder until evenly coated.
- Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the seasoned chicken to the skillet in a single layer. Cook for 6 to 8 minutes, stirring occasionally, until the chicken is lightly browned but not fully cooked through. The internal temperature should reach about 150 degrees Fahrenheit at this stage. Remove from heat.
- In a large mixing bowl, stir together the softened cream cheese, sour cream, mayonnaise, 1 cup of the shredded cheddar, and parmesan cheese until smooth.
- Add the partially cooked chicken, sautéed onion mixture, and broccoli florets to the bowl. Stir until everything is evenly coated in the creamy sauce.
- Transfer the mixture to the prepared baking dish and spread into an even layer. Sprinkle the remaining 1 half cup cheddar cheese over the top.
- Bake uncovered for 25 to 30 minutes, until the casserole is hot and bubbly and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Let rest for 5 minutes before serving. Sprinkle with chopped fresh parsley just before serving. Cook chicken to an internal temperature of 165 degrees Fahrenheit as measured with a food thermometer.
Notes
- For extra browning on top, broil for 2 to 3 minutes at the end of baking while watching closely.
