Description

Creamy low carb chicken casserole with broccoli and cheddar. This easy recipe is family-friendly and perfect for busy weeknights or meal prep.


Ingredients

  • 2 pounds boneless skinless chicken breasts cut into 1 inch cubes
  • 1 teaspoon kosher salt
  • 1 half teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3 cups small broccoli florets
  • 1 tablespoon olive oil
  • 1 half cup finely diced yellow onion
  • 2 cloves garlic minced
  • 4 ounces cream cheese softened
  • 1 cup sour cream
  • 1 half cup mayonnaise
  • 1 and one half cups shredded sharp cheddar cheese divided
  • 1 quarter cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Lightly grease a 9 by 13 inch baking dish.
  2. In a large bowl, toss the cubed chicken with salt, black pepper, garlic powder, and onion powder until evenly coated.
  3. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the seasoned chicken to the skillet in a single layer. Cook for 6 to 8 minutes, stirring occasionally, until the chicken is lightly browned but not fully cooked through. The internal temperature should reach about 150 degrees Fahrenheit at this stage. Remove from heat.
  5. In a large mixing bowl, stir together the softened cream cheese, sour cream, mayonnaise, 1 cup of the shredded cheddar, and parmesan cheese until smooth.
  6. Add the partially cooked chicken, sautéed onion mixture, and broccoli florets to the bowl. Stir until everything is evenly coated in the creamy sauce.
  7. Transfer the mixture to the prepared baking dish and spread into an even layer. Sprinkle the remaining 1 half cup cheddar cheese over the top.
  8. Bake uncovered for 25 to 30 minutes, until the casserole is hot and bubbly and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. Let rest for 5 minutes before serving. Sprinkle with chopped fresh parsley just before serving. Cook chicken to an internal temperature of 165 degrees Fahrenheit as measured with a food thermometer.

Notes

  • For extra browning on top, broil for 2 to 3 minutes at the end of baking while watching closely.
