Description

Crispy outside and cheesy inside low carb broccoli cheddar rounds. A healthy, gluten free snack baked to golden perfection.


Ingredients

  • 2 cups finely chopped steamed broccoli, well drained
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 400 degrees F. Line a large baking sheet with parchment paper and brush lightly with olive oil.
  2. Steam broccoli for 4 to 5 minutes until tender. Let it cool, then chop very finely and press with paper towels to remove excess moisture.
  3. In a large bowl, combine the chopped broccoli, cheddar cheese, mozzarella, Parmesan, egg, almond flour, garlic powder, onion powder, salt, black pepper, and paprika. Mix until a thick mixture forms.
  4. Scoop about 2 tablespoons of mixture and shape into small round patties about 1/2 inch thick. Place them on the prepared baking sheet, spacing them slightly apart.
  5. Lightly brush the tops with the remaining olive oil for better browning.
  6. Bake for 18 to 22 minutes, flipping halfway through, until golden brown and crisp on the edges.
  7. Remove from the oven and let them rest for 5 minutes to firm up before serving.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • Reheat in a 375 degree F oven for 8 to 10 minutes to restore crispness.
