Ingredients
- 2 large cucumbers, thinly sliced
- 1 cup shredded carrots
- 2 tablespoons thinly sliced red onion
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon toasted sesame seeds
- For the Dressing:
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey
- 1/2 teaspoon sesame oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
Instructions
- Combine sliced cucumbers, shredded carrots, red onion, and chopped cilantro in a large bowl.
- Whisk together olive oil, lemon juice, honey, sesame oil, salt, and black pepper in a small bowl until blended.
- Pour the dressing over the vegetables and toss gently to coat evenly.
- Sprinkle toasted sesame seeds over the salad and toss lightly.
- Refrigerate for 15 to 20 minutes before serving to allow flavors to develop. Serve chilled.
