Ingredients
- 6 strips beef bacon, cut into ½‑inch pieces
- ½ medium onion, chopped
- 2 cloves garlic, minced
- ¼ cup flour
- 3 cups milk
- 2 cups chicken broth (can use 2 tsp Better Than Bouillon + 2 cups water)
- 2 lb Yukon Gold or Russet potatoes (peeled and diced)
- 1 tsp salt
- ½ tsp black pepper
- ¾ cup sour cream
- ¾ cup shredded cheddar cheese
- Sliced green onions or chives, for garnish
Instructions
- In a large pot, cook the beef bacon over medium‑high heat for 8–10 min until crispy. Remove the beef bacon and leave the grease in the pot.
- Add the chopped onion to the fat and sauté for 3–4 min until soft. Add garlic and cook for 30 seconds more.
- Whisk in the flour for about 30 seconds, then gradually pour in the milk while whisking to avoid lumps.
- Add the chicken broth, diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for ~20 minutes, until the potatoes are tender and the soup has thickened.
- Stir in the sour cream, shredded cheddar cheese, and reserved beef bacon.
- Serve the soup in bowls, garnished with green onions or chives.
Notes
- Cooking the flour with the onions for about 1 minute before adding liquids can help thicken the soup further.
