Loaded Potato Skins with Cheese and Chicken

Description

Crispy potato shells filled with seasoned chicken, melted cheese, and fresh toppings.


Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked shredded chicken
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons chopped green onions


Instructions

  1. Preheat oven to 400°F. Scrub potatoes clean, dry, and rub with olive oil, salt, and black pepper.
  2. Bake potatoes directly on the oven rack for 45 to 50 minutes until tender.
  3. Let potatoes cool slightly, then cut in half lengthwise and scoop out most of the flesh, leaving a thin layer.
  4. Brush the inside of the skins lightly with olive oil and place cut side down on a baking sheet.
  5. Bake for 10 minutes, then flip and bake another 5 minutes until crisp.
  6. In a bowl toss shredded chicken with garlic powder and paprika.
  7. Fill each potato skin with chicken and top with shredded cheddar cheese.
  8. Return to oven and bake for 5 to 7 minutes until cheese is melted.
  9. Top with Greek yogurt and green onions before serving.

Notes

  • Store leftovers in the refrigerator for up to 3 days and reheat in the oven for best texture.
