A one-dish casserole featuring juicy beef meatloaf topped with creamy mashed potatoes and melted cheddar cheese.

Ingredients

  • 1 1/2 pounds ground beef 85 percent lean
  • 1 small yellow onion finely diced
  • 2 garlic cloves minced
  • 3/4 cup plain breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 pounds Yukon Gold potatoes peeled and cut into 1 inch chunks
  • 1/2 cup whole milk warmed
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded sharp cheddar cheese
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 375 degrees F. Grease a 9 by 13 inch baking dish.

  3. Press meat mixture evenly into the bottom of the baking dish.
  4. Bake uncovered for 30 to 35 minutes until meat is mostly cooked (150 degrees F internal temperature). Drain excess grease.
  5. Boil potatoes in water for 15 to 18 minutes until fork tender. Drain well.
  6. Mash potatoes with warm milk, butter, salt, and pepper until smooth.
  7. Spread mashed potatoes evenly over the meat layer.
  8. Sprinkle cheddar cheese over the mashed potatoes.
  9. Bake for 15 to 20 minutes until cheese is melted and meat reaches 160 degrees F internal temperature.
  10. Let rest for 10 minutes before slicing. Garnish with green onions and serve warm.
