Light Garlic Shrimp with Steamed Veggies

Description

A quick and healthy dinner featuring garlic lemon shrimp and crisp steamed vegetables.


Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 3 garlic cloves minced
  • 1/2 teaspoon kosher salt divided
  • 1/4 teaspoon black pepper divided
  • 1/4 teaspoon paprika
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 medium zucchini sliced into rounds


Instructions

  1. Bring 1 inch of water to a boil in a pot with a steamer basket. Add broccoli, carrots, and zucchini. Cover and steam for 5 to 7 minutes until crisp tender. Remove from heat and sprinkle with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  2. While vegetables steam, pat shrimp dry. Season with remaining 1/4 teaspoon salt, 1/8 teaspoon black pepper, and paprika.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add shrimp in a single layer. Cook for 2 to 3 minutes per side until pink and opaque.
  5. Drizzle lemon juice over shrimp and sprinkle with lemon zest. Toss gently and cook for 30 seconds more.
  6. Remove from heat and serve immediately with steamed vegetables.
