Description
A bright and flavorful meal with tender flaky salmon and perfectly roasted vegetables, all cooked on a single pan with a simple lemon garlic seasoning for an easy and healthy dinner.
Ingredients
- 4 salmon fillets about 6 ounces each
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 cup zucchini sliced
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
Instructions
- Preheat oven to 400°F and line a large sheet pan with parchment paper.
- In a bowl toss broccoli, cherry tomatoes, and zucchini with 1 tablespoon olive oil, half of the garlic, salt, and black pepper. Spread onto the sheet pan.
- Roast vegetables for 10 minutes.
- In a small bowl mix remaining olive oil, garlic, lemon juice, lemon zest, and oregano.
- Remove pan from oven and place salmon fillets on the pan with the vegetables.
- Brush lemon garlic mixture over the salmon.
- Return to oven and bake for 12 to 15 minutes until salmon flakes easily with a fork.
- Serve warm.
Notes
- Cook salmon to an internal temperature of 145°F for safe consumption.
- Do not overcook to keep the fish tender and moist.
