One Pan Lemon Garlic Salmon with Roasted Vegetables

Description

A bright and flavorful meal with tender flaky salmon and perfectly roasted vegetables, all cooked on a single pan with a simple lemon garlic seasoning for an easy and healthy dinner.


Ingredients

  • 4 salmon fillets about 6 ounces each
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 cup zucchini sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano


Instructions

  1. Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. In a bowl toss broccoli, cherry tomatoes, and zucchini with 1 tablespoon olive oil, half of the garlic, salt, and black pepper. Spread onto the sheet pan.
  3. Roast vegetables for 10 minutes.
  4. In a small bowl mix remaining olive oil, garlic, lemon juice, lemon zest, and oregano.
  5. Remove pan from oven and place salmon fillets on the pan with the vegetables.
  6. Brush lemon garlic mixture over the salmon.
  7. Return to oven and bake for 12 to 15 minutes until salmon flakes easily with a fork.
  8. Serve warm.

Notes

  • Cook salmon to an internal temperature of 145°F for safe consumption.
  • Do not overcook to keep the fish tender and moist.
