Description

Make lemon chicken with rice in one pan for an easy flavorful dinner. Juicy chicken and tender rice with bright lemon and garlic.


Ingredients

  • 1 pound boneless skinless chicken fillets
  • 1 teaspoon salt
  • 1 half teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 half teaspoon dried oregano
  • 2 tablespoons chopped parsley


Instructions

  1. Season the chicken with salt pepper and paprika.
  2. Heat olive oil in a large skillet over medium high heat.
  3. Add the chicken and cook for 4 to 5 minutes per side until lightly golden. Remove and set aside.
  4. In the same pan add butter and garlic and cook for 1 minute until fragrant.
  5. Stir in rice and cook for 1 to 2 minutes to lightly toast.
  6. Add chicken broth lemon juice lemon zest and oregano. Stir well.
  7. Return the chicken to the pan placing it over the rice.
  8. Bring to a gentle simmer then cover and reduce heat to low.
  9. Cook for 18 to 20 minutes until the rice is tender and the chicken reaches an internal temperature of 165°F.
  10. Sprinkle parsley over the top and let rest for 5 minutes before serving.

Notes

  • Always cook chicken to an internal temperature of 165°F to ensure it is safe to eat.
  • Letting the dish rest helps the rice finish absorbing liquid.
