Easy lemon blueberry cheesecake cookie bars with a soft cookie base and creamy filling, perfect for summer gatherings.
Ingredients
- For the cookie base: 1/2 cup unsalted butter, softened; 1/2 cup granulated sugar; 1/4 cup light brown sugar; 1 large egg; 1 teaspoon vanilla flavoring; 1 1/2 cups all purpose flour; 1/2 teaspoon baking soda; 1/4 teaspoon salt
- For the cheesecake layer: 8 ounces cream cheese, softened; 1/3 cup granulated sugar; 1 large egg; 1 tablespoon fresh lemon juice; 1 teaspoon lemon zest
- For the topping: 1 cup fresh blueberries; 1 tablespoon all purpose flour
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Add the egg and vanilla flavoring to the butter mixture. Mix until smooth.
- In a separate bowl, whisk together the all purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Press about two-thirds of the cookie dough evenly into the prepared pan to create the base.
- In another bowl, beat the softened cream cheese and sugar until smooth.
- Add the egg, fresh lemon juice, and lemon zest to the cream cheese mixture. Mix until creamy.
- Pour the cheesecake mixture over the cookie base and spread it evenly.
- Toss the fresh blueberries with 1 tablespoon of all purpose flour. Scatter the floured blueberries evenly over the cheesecake layer.
- Crumble the remaining cookie dough over the top of the blueberries.
- Bake for 30 to 35 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool completely in the pan. Refrigerate for at least 2 hours before slicing into bars.
Notes
- For clean slices, chill the bars thoroughly and use a sharp knife. Wipe the knife clean between cuts.
- Using fresh blueberries provides the best texture and flavor.
