Description
This one pot lasagna soup is rich, hearty, and packed with classic lasagna flavors in an easy to make soup form. Tender pasta, seasoned ground beef, and a tomato based broth come together for a comforting meal topped with creamy cheese.
Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1/2 cup onion diced
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups chicken broth
- 1 24 ounce jar marinara sauce
- 1 cup water
- 8 lasagna noodles broken into pieces
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook for 5 to 6 minutes until browned, breaking it apart.
- Add onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 1 minute.
- Add Italian seasoning, salt, and black pepper. Stir to combine.
- Pour in chicken broth, marinara sauce, and water. Bring to a boil.
- Add broken lasagna noodles and reduce heat to a simmer. Cook for 10 to 12 minutes until noodles are tender.
- Stir occasionally to prevent sticking.
- Serve soup topped with ricotta, mozzarella, parmesan, and fresh parsley.
Notes
- Cook ground beef to an internal temperature of 160°F for safe consumption.
- Add extra broth if the soup thickens too much as it sits.
