Description

This one pot lasagna soup is rich, hearty, and packed with classic lasagna flavors in an easy to make soup form. Tender pasta, seasoned ground beef, and a tomato based broth come together for a comforting meal topped with creamy cheese.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1/2 cup onion diced
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups chicken broth
  • 1 24 ounce jar marinara sauce
  • 1 cup water
  • 8 lasagna noodles broken into pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook for 5 to 6 minutes until browned, breaking it apart.
  2. Add onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 1 minute.
  3. Add Italian seasoning, salt, and black pepper. Stir to combine.
  4. Pour in chicken broth, marinara sauce, and water. Bring to a boil.
  5. Add broken lasagna noodles and reduce heat to a simmer. Cook for 10 to 12 minutes until noodles are tender.
  6. Stir occasionally to prevent sticking.
  7. Serve soup topped with ricotta, mozzarella, parmesan, and fresh parsley.

Notes

  • Cook ground beef to an internal temperature of 160°F for safe consumption.
  • Add extra broth if the soup thickens too much as it sits.
