Ingredients
- 1-2 tablespoons Olive Oil
- 1 pound Ground Chicken
- 1 large Onion, diced
- 4 cloves Garlic, minced
- 1 (15-ounce can) Diced Tomatoes, undrained
- 1 (15-ounce can) Tomato Sauce
- 1/3 cup Tomato Paste
- 4 cups Chicken Broth
- 1-2 cups Water
- 1 tablespoon Italian Seasoning
- 1 teaspoon Sea Salt
- Black Pepper, to taste
- 8 ounces Bowtie Pasta
- 1/2 cup Ricotta Cheese
- 2 ounces Mozzarella Cheese, shredded
- 1/4 cup Parmesan Cheese, shaved/shredded/fresh
- 1/4 cup Fresh Parsley, chopped
Instructions
- Heat a soup pot over medium-high heat and add olive oil.
- Add ground chicken, onion, and garlic. Sauté until the chicken is cooked through. Drain excess fat if needed.
- Stir in diced tomatoes, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, pepper, and bowtie pasta.
- Bring the soup to a boil, then reduce heat to a simmer. Cook for 10-15 minutes, stirring frequently. Adjust consistency with water or broth if needed.
- To serve, stir in ricotta, mozzarella, and Parmesan cheese, or serve cheese on the side. Garnish with fresh parsley.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
