Description
Creamy, refreshing, and easy-to-make key lime pie popsicles with coconut milk, lime juice, and a crunchy graham cracker swirl.
Ingredients
- 1 cup plain full fat yogurt
- 1 cup full fat coconut milk
- 1/2 cup fresh lime juice
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 3 cups fresh spinach
- 2 tablespoons lime zest
- 3/4 cup crushed graham crackers
- 3 tablespoons coconut sugar
- 3 tablespoons melted coconut oil
Instructions
- Stir together crushed graham crackers, coconut sugar, and melted coconut oil until combined. Set aside.
- Add yogurt, coconut milk, lime juice, maple syrup, melted coconut oil, spinach, and lime zest to a blender.
- Blend for 1 to 2 minutes until smooth and bright green.
- Pour filling into popsicle molds until three quarters full.
- Spoon graham cracker crumble into each mold to fill the remaining space. Press gently.
- Insert popsicle sticks and secure mold lid.
- Freeze for at least 4 hours or until firm.
- Run warm water over molds for a few seconds to release popsicles.
Notes
- For the brightest lime flavor, use freshly squeezed lime juice and fresh lime zest right before blending.
