Description

Creamy, refreshing, and easy-to-make key lime pie popsicles with coconut milk, lime juice, and a crunchy graham cracker swirl.


Ingredients

  • 1 cup plain full fat yogurt
  • 1 cup full fat coconut milk
  • 1/2 cup fresh lime juice
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3 cups fresh spinach
  • 2 tablespoons lime zest
  • 3/4 cup crushed graham crackers
  • 3 tablespoons coconut sugar
  • 3 tablespoons melted coconut oil


Instructions

  1. Stir together crushed graham crackers, coconut sugar, and melted coconut oil until combined. Set aside.
  2. Add yogurt, coconut milk, lime juice, maple syrup, melted coconut oil, spinach, and lime zest to a blender.
  3. Blend for 1 to 2 minutes until smooth and bright green.
  4. Pour filling into popsicle molds until three quarters full.
  5. Spoon graham cracker crumble into each mold to fill the remaining space. Press gently.
  6. Insert popsicle sticks and secure mold lid.
  7. Freeze for at least 4 hours or until firm.
  8. Run warm water over molds for a few seconds to release popsicles.

Notes

  • For the brightest lime flavor, use freshly squeezed lime juice and fresh lime zest right before blending.
