Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 0.66 cup granulated sugar
  • 2 large eggs
  • 0.33 cup fresh key lime juice
  • 1 tablespoon lime zest
  • 0.5 cup sour cream
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 325 degrees Fahrenheit and line an 8 by 8 inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly combined.
  3. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
  4. Bake the crust for 8 to 10 minutes until lightly set, then remove and let cool slightly.
  5. In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  6. Add eggs one at a time, mixing on low speed until just combined.
  7. Mix in key lime juice, lime zest, sour cream, and vanilla extract until smooth.
  8. Pour the filling over the crust and spread evenly.
  9. Bake for 30 to 35 minutes until the center is just set and slightly jiggly.
  10. Remove from oven and cool at room temperature, then refrigerate for at least 3 hours until fully chilled.
  11. Lift from the pan using parchment and slice into bars before serving.
