Ingredients
- 1.5 cups graham cracker crumbs
- 0.33 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 0.66 cup granulated sugar
- 2 large eggs
- 0.33 cup fresh key lime juice
- 1 tablespoon lime zest
- 0.5 cup sour cream
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325 degrees Fahrenheit and line an 8 by 8 inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly combined.
- Press the mixture firmly into the bottom of the prepared pan to form an even crust.
- Bake the crust for 8 to 10 minutes until lightly set, then remove and let cool slightly.
- In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing on low speed until just combined.
- Mix in key lime juice, lime zest, sour cream, and vanilla extract until smooth.
- Pour the filling over the crust and spread evenly.
- Bake for 30 to 35 minutes until the center is just set and slightly jiggly.
- Remove from oven and cool at room temperature, then refrigerate for at least 3 hours until fully chilled.
- Lift from the pan using parchment and slice into bars before serving.
