Description

A quick low carb dinner with juicy beef, melted cheese, and savory mushrooms ready in 30 minutes.

Ingredients

  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 half teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 small yellow onion diced
  • 2 cups sliced cremini mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon Worcestershire sauce
  • 1 cup beef broth
  • 1 cup shredded Swiss cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat a large skillet over medium high heat. Add the ground beef and cook for 6 to 7 minutes, breaking it apart into small crumbles until fully browned.
  2. Season the beef with salt, black pepper, and garlic powder. Transfer the cooked beef to a plate and set aside.
  3. In the same skillet, add olive oil and butter. Once melted, add the diced onion and cook for 3 to 4 minutes until softened.
  4. Add the sliced mushrooms and cook for 6 to 8 minutes, stirring occasionally, until they release moisture and become golden brown.
  5. Stir in Worcestershire sauce and pour in the beef broth. Simmer for 3 to 4 minutes until slightly reduced.
  6. Return the cooked ground beef to the skillet and stir to combine with the mushroom mixture. Cook for another 2 to 3 minutes until heated through.
  7. Sprinkle the shredded Swiss cheese evenly over the top. Reduce heat to low and cover the skillet for 2 to 3 minutes until the cheese is fully melted.
  8. Remove from heat and garnish with chopped parsley before serving.
