Keto Creamy Chicken Enchilada Casserole is a simple, low-carb comfort food. This baked dish features shredded chicken smothered in a rich, homemade cream cheese sauce, baked until bubbly and topped with melted cheese. It is perfect for a quick, satisfying weeknight meal that keeps you in ketosis.
Ingredients
- 1.5–2 lb cooked shredded chicken
- 1 cup red enchilada sauce (no sugar added)
- 4 oz diced green chiles
- 1/2 cup sour cream
- 4 oz cream cheese, softened
- 1/2 cup chicken broth
- 1–2 tbsp taco seasoning (sugar-free)
- 1 1/2–2 cups shredded cheddar or Mexican blend cheese
- 2 tbsp olive oil or butter
- 1/4 cup minced onion
- 2 cloves garlic, minced
- Salt and pepper to taste
- Toppings: chopped cilantro, avocado, sliced green onions
Instructions
- Make the creamy sauce: In a skillet over medium heat, warm oil or butter. Sauté onion 3–4 minutes until softened; add garlic 30 seconds. Stir in broth, cream cheese, sour cream, enchilada sauce, and taco seasoning; whisk until smooth and bubbling. Season to taste.
- Combine: In a large bowl, mix shredded chicken and green chiles with about two-thirds of the sauce and 1 cup cheese until coated.
- Assemble: Spread a thin layer of sauce in a greased 2-quart baking dish. Add chicken mixture, top with remaining sauce, and finish with remaining cheese.
- Bake: Bake at 400°F (200°C) for 10–20 minutes until hot and the cheese is melted and lightly browned. Rest 5 minutes.
- Serve: Garnish with cilantro, avocado, and green onions. Spoon into bowls; great with a side salad or cauliflower rice.
