Ingredients

  • 1.52 lb cooked shredded chicken
  • 1 cup red enchilada sauce (no sugar added)
  • 4 oz diced green chiles
  • 1/2 cup sour cream
  • 4 oz cream cheese, softened
  • 1/2 cup chicken broth
  • 12 tbsp taco seasoning (sugar-free)
  • 1 1/22 cups shredded cheddar or Mexican blend cheese
  • 2 tbsp olive oil or butter
  • 1/4 cup minced onion
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Toppings: chopped cilantro, avocado, sliced green onions


Instructions

  1. Make the creamy sauce: In a skillet over medium heat, warm oil or butter. Sauté onion 3–4 minutes until softened; add garlic 30 seconds. Stir in broth, cream cheese, sour cream, enchilada sauce, and taco seasoning; whisk until smooth and bubbling. Season to taste.
  2. Combine: In a large bowl, mix shredded chicken and green chiles with about two-thirds of the sauce and 1 cup cheese until coated.
  3. Assemble: Spread a thin layer of sauce in a greased 2-quart baking dish. Add chicken mixture, top with remaining sauce, and finish with remaining cheese.
  4. Bake: Bake at 400°F (200°C) for 10–20 minutes until hot and the cheese is melted and lightly browned. Rest 5 minutes.
  5. Serve: Garnish with cilantro, avocado, and green onions. Spoon into bowls; great with a side salad or cauliflower rice.
